The Clarified New York Sour is a refined take on the traditional whiskey sour, featuring the smooth combination of rye, lemon, and syrup, meticulously clarified for a transparent appearance, and finished with a distinctive red wine float.
Ingredients
- 2 oz (60 ml) Rye
- 0.75 oz (22.5 ml) fresh lemon juice
- 0.75 oz (22.5 ml) simple syrup
- 0.5 oz (15 ml) red wine
- 1 oz (30 ml) whole milk
Steps
- Following the milk wash technique, clarify the cocktail using the above ratios of rye, lemon juice, simple syrup, and whole milk.
- Place a rocks glass in the freezer to chill.
- Stir the clarified mixture with ice briefly.
- Place a large ice cube in the chilled glass.
- Transfer the cocktail into the glass.
- Gently layer the red wine on top to create the float.
Notes
- Pouring the wine over the back of a barspoon can aid in achieving the perfect float.
- While I prefer Pinot Noir for the float, feel free to use any red wine you like.
