The El Pepino is a spicy and refreshing margarita riff where the crispness of cucumber balances the kick from jalapeños, rounded off with a subtle sweetness from agave.
Ingredients
- 1.5 oz (45 ml) Tequila Blanco
- 1 oz (30 ml) Lime Juice
- 0.75 oz (22.5 ml) Agave
- 3 Cucumber Slices
- 3 Jalapeño Slices
- Chili Salt Rim
Steps
- Chill a rocks glass in the freezer.
- Cut a piece of lime and rub the open end on half of the rocks glass.
- Half rim the glass with chili salt.
- In a shaker, combine tequila, lime juice, agave, cucumber slices, and jalapeño slices.
- Add cubed ice and shake vigorously for about 15 seconds.
- Double strain the mixture into the chilled glass over a large ice cube.
Notes
- The rim was salted with Tajin for an added layer of flavor.
- A few drops of 20% saline solution can enhance the taste.
- Adjusting to 2 jalapeño slices could be considered for those who prefer a milder spice level.
- No muddling necessary for this drink.
