Mojito

Ingredients

  • 2 oz (60 ml) rum
  • 0.75 oz (22.5 ml) fresh lime juice
  • 0.5 oz (15 ml) rich Demerara syrup
  • Soda water
  • 10-12 mint leaves + mint sprig for garnish

Steps

  1. Chill a Collins glass in the freezer.
  2. In a shaker, combine the rum, lime juice, and Demerara syrup.
  3. Take the chilled glass, slap the mint leaves to activate their oils, and place them in the glass.
  4. Agitate the mint leaves and rub them against the walls of the glass with a bar spoon, being careful not to break them up.
  5. Layer ice cubes in the glass.
  6. Add cubed ice to the shaker and shake vigorously for about 15 seconds.
  7. Double strain the mixture into the chilled glass.
  8. Top up the glass with soda water (about 3 oz).
  9. Using the bar spoon, pull up some of the mint leaves into the drink.
  10. Garnish with a mint sprig and lime wheel.
